Mini Muffin Recipes

Pecan Pie Mini Muffins

  • 1 cup brown sugar, packed

  • 1/2 cup flour

  • 1 cup pecans, chopped

  • 2/3 cup butter, melted and cooled

  • 2 eggs, beaten

  • cooking spray

  • Preheat oven to 350

  • In mixing bowl, combine brown sugar, flour, and pecans

  • In another mixing bowl combine butter and eggs

  • Stir in flour mixture just until moistened. Grease 30 mini muffin cups and fill 3/4 full

  • Bake 20-25 minutes

  • Remove to cooling rack and cool

 

 

Rosemary Mini Muffins

  • 1 1/2 cups of all purpose flour

  • 1 tsp of baking powder

  • rosemary1 tsp of baking soda

  • 1/4 tsp of salt

  • 6 tbsp of sugar

  • 1 egg well beaten

  • 1/2 cup of milk

  • 3 tbsp of melted butter

  • 2 tsp of finely chopped fresh rosemary

  • 2 tsp of finely grated orange rind, orange only no pith

  • Preheat oven to 375 degrees.

  • Sift flour, bp, bs and salt into a bowl.

  • Make a well in the center.

  • Add the remaining ingredients including the rosemary and zest.

  • Gently fold.

  • Spoon into 20 buttered mini muffin cups.

  • Bake 12 minutes until firm to the touch.

  • Cool on wire rack.

  • Store in an airtight container.

  • Nice for mini sandwiches and a savory touch with tea.

 

Cheeseburger Mini Muffins

  • 1/2 lb beef mince
  • 1 Cup onion Chopped
  • 2 1/2 Cups flour
  • 1 Tbps sugar
  • 2 Tsp baking powder
  • 1 Tsp ketchup
  • 3/4 Cup milk
  • 1/2 Cup Melted butter
  • 2 eggs
  • 1 Tsp mustard
  • 2 Cups Shredded cheddar cheese
  • In A Skillet, cook beef And Onion.
  • Drain.
  • In A Bowl Combine Flour, Sugar Baking Powder And Salt.
  • In Another Bowl Combine Ketchup, Milk, Butter, Eggs And Mustard.
  • Stir Into Dry Ingredients.
  • Add In Beef Mixture And Cheese.
  • Fill Greased Mini Muffin Tins.
  • Bake At 425° For 15 To 18 Minnutes.
  • Cool 5 Minutes Before Removing From Pans.
