Pecan Pie Mini Muffins

1 cup brown sugar, packed

1/2 cup flour

1 cup pecans, chopped

2/3 cup butter, melted and cooled

2 eggs, beaten

cooking spray

Preheat oven to 350

In mixing bowl, combine brown sugar, flour, and pecans

In another mixing bowl combine butter and eggs

Stir in flour mixture just until moistened. Grease 30 mini muffin cups and fill 3/4 full

Bake 20-25 minutes

Remove to cooling rack and cool
Rosemary Mini Muffins

1 1/2 cups of all purpose flour

1 tsp of baking powder
-
1 tsp of baking soda
-
1/4 tsp of salt
-
6 tbsp of sugar
-
1 egg well beaten
-
1/2 cup of milk
-
3 tbsp of melted butter
-
2 tsp of finely chopped fresh rosemary
-
2 tsp of finely grated orange rind, orange only no pith

Preheat oven to 375 degrees.
Sift flour, bp, bs and salt into a bowl.
Make a well in the centre.
Add the remaining ingredients including the rosemary and zest.
Gently fold.
Spoon into 20 buttered mini muffin cups.
Bake 12 minutes until firm to the touch.
Cool on wire rack.
Store in an airtight container.
Nice for mini sandwiches and a savoury touch with tea.
Cheeseburger Mini Muffins

- 1/2 lb beef mince
- 1 Cup onion Chopped
- 2 1/2 Cups flour
- 1 Tbps sugar
- 2 Tsp baking powder
- 1 Tsp ketchup
- 3/4 Cup milk
- 1/2 Cup Melted butter
- 2 eggs
- 1 Tsp mustard
- 2 Cups Shredded cheddar cheese
In A Skillet, cook beef And Onion.
Drain.
In A Bowl Combine Flour, Sugar Baking Powder And Salt.
In Another Bowl Combine Ketchup, Milk, Butter, Eggs And Mustard.
Stir Into Dry Ingredients.
Add In Beef Mixture And Cheese.
Fill Greased Mini Muffin Tins.
Bake At 425° For 15 To 18 Minutes.
Cool 5 Minutes Before Removing From Pans.
