Use this simple recipe to create a Basic Cake which can be used for any size cupcake.

420g Self Raising Flour
2 1/2 teaspoons baking powder
1/2 teaspoons salt
310g Caster Sugar
130g butter or margarine
2 eggs
1 1/2 teaspoons vanilla
1 1/4 cups milk
· Preheat oven to 350°F/180c
Products used: Cup measures; Electric Mixer; Silicone spoons; Silicone cup cases or paper cases in a metal bun tin; wire rack

· Sift together flour, baking powder and salt; set aside.
· Cream sugar and butter together until light.
· Add eggs and vanilla to creamed mixture and beat until thoroughly mixed.
· Add flour mixture to creamed mixture alternately with milk, beating well after each addition.
· Continue beating for one minute then spread batter evenly in prepared pans.
· Bake 15 to 20 minutes or until a cake tester inserted in centre comes out clean.
· Cool buns on wire rack.
