1 tbsp Butter or Olive Oil

I Onion – finely chopped

12oz Mushroom – diced

1-2 cloves crushed Garlic

2 Tbsp Lemon juice

1 tbsp Flour

1 egg

4 tbsp Natural Yogurt

2 handfuls of grated Cheddar

Salt and Pepper

Another handful of grated Cheddar for the topping

This is such an easy summery recipe and the toppings can be varied to suit whatever you have in the fridge!  A great supper or lunch served with salad.

1 Ready Rolled sheet Puff Pastry (these are available in most supermarkets nowadays, both fresh or frozen)

4 oz grated cheese - a mix of cheddar and Mozzarella works well

A handful of fresh Basil leaves

2-3  Tomatoes, sliced thinly

1 jar of pesto

1 tbsp Butter or Olive Oil

6-8 Sun-dried Tomatoes

1-2 cloves crushed Garlic

a few torn Basil leaves

1 tbsp Flour

1 egg

4 tbsp Natural Yogurt

2 handfuls of grated Cheddar

Serves 6

Shortcrust Pastry
4 ozs (110 g) white flour
2 ozs (55 g) butter
1 egg, preferably free-range

Another fruit spotted on the market today - fresh cherries - yummy! As sweet as cherry pie.....And we have a host of pie dishes to use, of course.

For the pie filling
  • 150g/5oz good-quality black cherry jam

  • 100ml/3½fl oz water

  • 1 tbsp ground arrowroot, mixed to a paste with 2 tbsp water

  • 750g/1½lb fresh red cherries, stalks and stones removed

Make trhe Apple flowers using a really sharp little knife to get thin slices, such as the veritable Sabatier steak knife (serrated) at £24.50

Sweet Shortcrust Pastry

  • 250 g plain flour
  • 125 g butter, chilled and diced
  • 75 g caster sugar
  • 1/2 lemon, grated zest only
  • 1 egg, beaten

traditional easter pie recipe

This simplified version of Torta Pasqualina, the traditional Italian Easter pie from Liguria, is made with spinach and ricotta, poached eggs and crunchy filo pastry.


Serves 6 to 8 

280g jar baby artichokes in olive oil, drained (reserve the oil) and halved 
500g (1lb 2oz) ready-washed fresh spinach, trimmed and chopped 
2 garlic cloves, finely chopped 
75g (3oz) freshly grated Parmesan cheese 
200g (7oz) ricotta cheese 
3 tbsp freshly chopped mixed herbs 
generous pinch of nutmeg 
8 medium eggs 
25g (1oz) butter 
16 sheets filo pastry, halved 

How about a Spaghetti Cake for dinner?!! This "cake" is gorgeous....

400 g spaghetti
salt 
500 g of cabbage,
4 tablespoons butter 
30 g flour
300 g of cream
black pepper
1 pinch of freshly grated nutmeg
300 g of smoked turkey breast in one piece
4 eggs
3 tablespoons of breadcrumbs

  • 1 x 23cm shortcrust pastry case
  • 1kg/2lb 3½oz Bramley apples

  • pinch sugar, to taste

  • 1 tbsp water or apple juice

  • 100g/3½oz plain flour

  • 1 tsp cinnamon

  • 1tsp ground ginger

  • 175g/6oz butter

  • 50g/2oz rolled oats

  • 100g/3½oz demerara sugar

125g Caster Sugar

75g Butter

4 or 5 eating apples (we generally use golden delicious)

225g Ready-made puff pastry

4tbsp Olive Oil

2tbsp Butter

4 Red Onions, sliced thinly

5ml/1tsp Unrefined Soft Light Brown Sugar

15ml/1tbsp Balsamic Vinegar

15ml/1tbsp Soy Sauce

200g/7oz/3cups White Button Mushrooms, sliced

1 Garlic Clove, finely chopped

2.5ml/2tsp Fresh Tarragon, chopped

A delicious summery dessert using seasonal ingredients

Pastry

125g Plain Flour

60g Butter

1tbsp Caster Sugar

12 Egg Yolk

2 – 3tbsp water

Using a Silverwood 9" flan tin, preheat the oven to 180C. Because you're using a Silverwood flan tin, you don't need to blind bake the pastry to achieve a crispy crust 

8 oz shortcrust pastry - line the flan tin.
