This is my basic sweet scone mix. You can adapt this to make any number of flavoured scones 

8 oz SR Flour

4 oz butter or marge

2 oz Castor suagr

2 eggs

2 fl oz milk

  • Rub the marge into the flour.  Add the sugar and mix.

  • Beat the eggs into the milk and gradually add to the dry mix. DO NOT OVERMIX!

  • Tip the mix out onto lightly floured surface and pat flat 

  • Cut out scones and place on baking tray.

  • Pop into Hot Oven for 10 minutes, then turn down temperature to about 180c for next 10 minutes (based on a standard 3" scone cutter)
