
1 Aubergine, Sliced and Griddled
2 Courgettes, Sliced and Griddled
2 Red Peppers, Sliced and Griddled
Small tub of Hummus
Equipment: Griddle Pan, Sharp Knife, 4 x 7cm Cooking Rings
(serves 4)

Layer a slice of Aubergine in the base of each Cooking Ring

Followed it with red pepper, courgette, red onion and a layer of hummus

Top with Hummus (or why not try olives or pine nuts)

Bake at 180C for approx 10 minutes

Remove ring and serve

These look fabulous served as a starter with fresh salad and a balsamic dressing - or why not try serving them as a main course with stuffed chicken breasts wrapped in bacon.
