Cardamom and Vanilla Scented Apple Cake - A wonderful recipe to use wonderful seasonal apples.

  • 185 grams unsalted butter, softened

  • 185 gms (3/4 cup) of caster sugar

  • 2 large eggs

  • 250 grams (2 cups ) of self raising flour

  • 150 mls of milk

  • 1 teaspoon of vanilla extract

  • Seeds of 8 green cardamom pods, ground in a morter and pestle with a

  • teaspoon of sugar

  • 2 large apples

  • Juice of half a lemon

  • icing sugar to sift

Preheat the oven to 180. Grease and line with parchment ( baking paper) a 20cm spring form cake tin. (the Silverwood one is probably best Wink
In a mixing bowl beat together the butter and sugar until pale and creamy. Add in eggs one at a time and beat well after each addition.
Mix through the ground cardamom and sugar, sift in the flour, and mix well. Add the milk and vanilla together and stir until smooth.
Spoon the mixture into the cake tin and level. Peel core and slice the apples, and sprinkle with the lemon juice. Arrange the slices in a circular pattern on top of the cake pressing each slice slightly into the cake batter.

Bake for 1 hour or until a skewer inserted comes out clean.
Cool the cake in the tin for at least 10 minutes, then take out to cool on a rack. Dust with icing sugar to serve.

We have had a very busy few months arranging and filling food boxes for collection for a small group of lovely local customers and deliveries to some wonderful elderly and vulnerable people. It gave us time to re-evaluate our little shop and to see what works and what doesn’t!

Cooking Fantastic Logo EATABLES webFor those who have missed our coffeeshop and cakes, we will once again be making a COW (Cake Of the Week) which will change every week and be available Thursdays, Fridays and Saturdays. You can also order our fresh Sultana or Cheese Scones, Carrot Cake and Chocolate Brownie (minimum of 4) anytime.
We have been working with Kendall's Farm Butchers who deliver to us on Tuesdays, Thursdays and Saturdays and Acorn Organic who bring their delicious Milk and Cream on Mondays and Thursdays.

We are delighted to announce that we are now a drop-off point for KD Fruiterers who bring their Fruit and Veg Boxes to us every Thursday and we are stocking a small number of their basics, Thursday to Saturday.

Items such as Yorkshire Butter, Local Cheeses, delicious Ham and Turkey Slices, Jams and Chutneys, Oils and Balsamic Vinegars, Flour and NEW Yorkshire Pasta are usually in stock and our frozen items such as our popular pizza dough pucks,
white and granary part-baked bread, ice-creams, ready meals etc should always be available. 

A huge positive in this recent situation is that we have been able to showcase our FANTASTIC local suppliers and would love you to try them too!

We are open 10-6pm every Thursday, Friday and Saturday for collection and a piece cake, of course, while you come to pick them up .....

oh, and roasting tins to cook the meat in, and plates to eat them off, and fantastic knives to bone the fish with, and cutlery to eat it all with, and pans to heat the veg in, and bowls to eat the soup from, and serving dishes to serve, and tablecloths, and fish bone tweezers and carving boards..... (I'd best stop there - you get the gist!)
