100g Butter/Margarine
50g Caster Sugar
Grated rind of 1 large lemon or orange (or try cinnamon/nutmeg)
150g self raising flour
· Beat the margarine in a bowl, gradually adding the sugar and rind (and spices).
· Mix in the flour and form a dough.
· Cover two large baking trays with bakoglide/baking sheet.
· Form the dough into small balls (large marble size)
· Dip a fork in cold water and press the top down on each ball to make an imprint.
· Bake at 180C for approximately 10 minutes until golden.
· Cool on a wire rack
