
175g dark chocolate, minimum 70% cocoa solids
250g unsalted butter, softened
275g icing sugar, sifted
1 tbsp vanilla extract or camp coffee
· Melt the chocolate and butter in a bowl over a pan of hot water – or in the microwave if you’re feeling brave!
· Add the vanilla
· Sieve the icing sugar into the bowl– you MUST or the icing will have lumps!
· Beat like mad and spread on top of cake with a palette knife
