(named after the lovely lady who gave us the recipe)
Cake
5oz Margarine or Butter
8oz Sugar
2 beaten eggs
4oz Sieved Plain Flour
2oz Cocoa
½ tsp Baking Powder
Topping
2oz Margarine
5oz Sieved Icing Sugar
2 Tblsp Cocoa
1 Tbsp of Milk
- Melt Margarine or Butter in a microwavable jug (we recommend the Le Creuset Batter Jug). Add Sugar and beaten eggs, Sieved Plain Flour, Cocoa and Baking Powder
- Mix together until all combined and pour into an 8” Square Silicone Baking Tray. Microwave for 5 to 7 Minutes depending on the microwave power until it has risen evenly.
- Meanwhile: In the jug mix 2oz Margarine, 5oz Sieved Icing Sugar, 2 Tblsp Cocoa and 1Tblsp of Milk Microwave in the jug for 2 minutes, it will bubble up quite high. Remove from the microwave, stir briskly and then pour onto the top of the warm brownie.
- The brownie can be frozen in the tray as soon as cool.
