Use this simple recipe to create a Basic Cake which can be used in any cake tin, cupcake, loaf tin, or specialty pan. It provides a nice canvas for decorating and can be filled with your favourite filling.

420g Self Raising Flour

2 1/2 tsps Baking Powder

1/2 tsps salt

310g Caster Sugar

130g Butter or Margarine 

2 Eggs

1 1/2 tsps Vanilla Essence

1 1/4 cups Milk

 Preheat oven to 350°F/180c

· Grease the bottom of two 8-inch round cake tins and line.

· For speciality pans spread trex evenly with a pastry brush and then add two tablespoons of flour and shake around the pan making sure there are no shiny bits.

· Sift together flour, baking powder and salt; set aside.

· Cream sugar and butter together until light.

· Add eggs and vanilla to creamed mixture and beat until thoroughly mixed.

· Add flour mixture to creamed mixture alternately with milk, beating well after each addition.

· Continue beating for one minute then spread batter evenly in prepared pans.

· Bake 30 to 35 minutes or until a cake tester inserted in centre comes out clean.(for a speciality cake these times may be longer)

· Cool cakes in the pan(s) on wire racks for 10 minutes.

· Remove from pans to cool completely.
